Ingredients for the Salad

  • 4 cups mixed greens (e.g., spinach, arugula or spring mix)
  • 1 medium apple (Honeycrisp or Granny Smith, thinly sliced)
  • 1/4 cup freeze-dried blueberries
  • 1/4 cup toasted walnuts (lightly toasted in a dry skillet for 34 minutes)
  • 1/4 cup crumbled goat cheese

Ingredients for the Light Vinaigrette

  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar (or white wine vinegar)
  • 1 tsp Dijon mustard
  • 1 tsp honey (adjust to taste)
  • Pinch of salt
  • Freshly ground black pepper

 


Instructions

  1. Make the Vinaigrette:
    • Whisk the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper in a small bowl or jar until emulsified. Taste and adjust the seasoning as needed.
