Ingredients for the Salad

- 1 medium apple (Honeycrisp or Granny Smith, thinly sliced)
- 1/4 cup freeze-dried blueberries
- 1/4 cup toasted walnuts (lightly toasted in a dry skillet for 3–4 minutes)
- 1/4 cup crumbled goat cheese
Ingredients for the Light Vinaigrette
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar (or white wine vinegar)
- 1 tsp Dijon mustard
- 1 tsp honey (adjust to taste)
- Pinch of salt
- Freshly ground black pepper
Instructions
- Make the Vinaigrette:
- Whisk the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper in a small bowl or jar until emulsified. Taste and adjust the seasoning as needed.
- Assemble the Salad:
- Toss the mixed greens, apple slices, and dried blueberries in a large salad bowl.
- Sprinkle the toasted walnuts and goat cheese over the top.
- Dress the Salad:
- Drizzle the vinaigrette over the salad just before serving.
- Serve:
