  • 4 large baking apples (like Honeycrisp or Fuji)
  • 1/4 cup walnut halves
  • 1/4 cup goat cheese (cut into small chunks and rolled in blueberries)
  • 2 tablespoons honey
  • 1/2 teaspoon cinnamon
  • A pinch of salt
  • Optional: extra blueberries for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Apples: Core the apples, creating a small well in the center while leaving about 1/2 inch at the bottom to hold the filling.
  3. Prepare the Goat Cheese Bites: Take small chunks of goat cheese and roll each piece in blueberries, gently pressing to coat the cheese.
  4. Stuff the Apples: Place a few walnut halves in the bottom of each apple, add a blueberry-covered goat cheese chunk, and repeat until the apples are filled. Drizzle a bit of honey and sprinkle cinnamon and a pinch of salt over the filling in each apple.
  5. Bake: Place the stuffed apples in a baking dish. Cover with foil and bake for 25-30 minutes or until the apples are tender. Remove the foil for the last 5 minutes to achieve a golden top.
  6. Serve: Drizzle with additional honey if desired and garnish with extra blueberries.
