  • 68 Chelan Ranch Honeycrisp apples, sliced (no need to peel)
  • 34 cinnamon sticks
  • 1 tablespoon whole cloves
  • 810 cups of water (enough to cover the apples and spices in the pot)

Instructions

  • Place the sliced apples, cinnamon sticks, and cloves in a large pot.
  • Pour in 8-10 cups of water, or enough to fully submerge the apples and spices.
  • Bring the mixture to a boil over medium-high heat.
  • Once boiling, reduce the heat to low and let it simmer uncovered for 2-3 hours. Stir occasionally, pressing the apples gently with a spoon to release their juices.
  • After simmering, turn off the heat and allow the mixture to cool slightly.

Notes

Straining for Clear Cider:

  • Pour the cooked mixture through a fine-mesh sieve or a cheesecloth-lined strainer set over a large bowl or pitcher to remove solids and create a clear cider.
  • For extra clarity, strain the cider a second time through fresh cheesecloth or a coffee filter.
