1. Mix the blueberry filling ingredients.

Blueberry Filling

  • 5 cups frozen or fresh blueberries
  • 3 tablespoons white sugar
  • 1/2 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 1/2 cup orange juice

Crumble topping

  • 1/2 cup butter softened
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 teaspoon lemon extract
  • 2/3 cup flour
  • 1/4 teaspoon baking powder
  • 1 pinch of salt
  • 1/2 teaspoon lemon zest
  • 1/2 teaspoon cinnamon
  • 1/2 cup walnuts or pecans
  • 1/4 cup decorative large-grain sugar granules sprinkled over the top

 


Instructions

  1. Preheat oven to 375° F.
  2. Mix the blueberry filling ingredients in an 8-inch square baking dish: blueberries, sugar, cinnamon, cornstarch, and orange juice. Set aside. 
  3. To make the crumble topping, begin in a small bowl and thoroughly mix the flour, baking powder, nuts, and salt. Set aside. In a medium bowl, cream butter and sugar until light and fluffy. Beat in egg, lemon zest, cinnamon, and lemon extract. Gradually add the flour mixture, stirring just until the ingredients are combined. Drop the batter by rounded tablespoons over the blueberry mixture to cover as much of the filling as possible. Sprinkle the decorative sugar granules evenly over the crumble topping for a decorative finish.
  4. Bake in preheated oven for 35 to 40 minutes, until the topping is golden brown and the filling is bubbling.
